We fired up our still in January 2018 and the first casks of our Single Malt and Rye Whisky have started the maturation process. While we patiently wait for the whisky, we have released a Wild Rye spirit. Our first release has sold out but we will release another batch online very soon.
THE STAR OF OUR DISTILLERY IS OUR COPPER POT STILL. 'STILLVESTER STILLONE' IS A ONE-OF-A-KIND CREATION
Stillvester was built by Mark Burns of Burns Welding and Fabrication in Griffith, NSW. Together, we purposefully designed the 1200L Stillvester to create a spirit that is both complex and smooth.
Stillvester’s custom-designed features include an enlarged hemisphere on the neck and an angled lyne arm. We want to ensure the vapour has to work hard to reach the condenser, to maximise copper contact. The condenser, with its 26 stainless steel baffles and six copper plates, rapidly cools the vapour and converts it back to liquid.
The resulting character of the new make spirit is one that contains complexity of flavours and a smoothness, ready to be barrelled in its chosen cask to continue the flavour journey.
WE USE BARLEY AND RYE GRAIN SOURCED FROM ARTISAN MALTSERS IN THE NEARBY RIVERINA REGION
Voyager Craft Malt produces small batch artisanal malts from its own locally grown and regionally sourced seasonal grains in the Riverina NSW.
The Voyager crew specialise in growing and malting hand-crafted malts from a diverse range of premium quality grain.
We mash the grain in our custom-built mash tun, upcycled from a reclaimed milk vat. We then pump this into the fermenter - another reclaimed piece - where we add the speciality yeast and then leave it to ferment for a minimum of five days.
as a small batch distillery we use a diverse selection of barrels and wood types that means every batch will be unique
Our barrels are hand selected predominantly from the local wine industry and include recoopered red wine and fortified wine casks. Some barrels have been shaved and recharred and we have filled others wet, fresh from the winery. Our fleet include 100 and 200 litre casks.
While honouring the traditional processes of whisky making, being a craft distillery, we aim to push the boundaries to create innovative whisky experiences. We have a number of special project barrels, including two specially commissioned red gum barrels – one filled with Single Malt and one with Rye.
